The narrow bar width, also called the X-dimension.

How many modules of quiet zone?

EAN and UPC often need about 7 to 11. Code 128 needs a clear margin too. Check the spec you were given.

Does this set the bar height?

No. Height is separate, and too-short bars fail in supermarkets.
